We source the passion fruit for this bar from Cocoa Supply, a family owned business based in Ecuador. They work directly with their farmers and producers, and pay prices above Fair Trade minimums. About Our Asochivite Cacao
The Q’eqchi Maya farmers of Chivite, Guatemala harvest cacao from the wild trees surrounding their village, and handle all of the fermentation and drying themselves. They harvest our beans from ten specific farms, and ferment and dry them using our custom fermentation and drying protocols. The result is extremely bright and fruity beans, and we preserve those qualities through our careful roasting and conching process.
About Our Freshly Pressed, Single Origin Cocoa Butter
Most cocoa butter used in chocolate bars is made from many different types of cacao beans, and then deodorized to remove all the flavor. This means the cocoa butter is diluting the natural flavors of the chocolate to which it's added. However, as with all our bars, we freshly press our cocoa butter from the same beans we use to make our chocolate. This ensures the cocoa butter retains the single origin flavors of the beans, which enhances and intensifies the flavor, and also makes each bar exceptionally smooth.
