Potomac Finca Las Veraneras El Salvador 70%

Before this, I’m not sure that I’ve ever had a bar using cacao from El Salvador, so I’m really excited to be working with this cacao!

This cacao is grown at Finca Las Veraneras, which is primarily a coffee farm and they’ve started growing a small amount of cacao. It’s the main farm of Tierra Bendita’s Biokrop Project. They grow this cacao (and their coffee) using zero agrochemicals and low-impact sustainable processes. Tierra Bendita’s team of scientists use Agroecology to improve and maintain the fertility of the farm’s soil using both modern innovations and historic cultivation methods.

This bar is super mild for a 70% dark chocolate. It’s so mild and creamy that it tastes almost like a milk chocolate, with nice tropical fruit notes and a cardamom or cinnamon spice note.
